Petticoat Tails

This is my Gran's recipe and one of our family's favorite cookies--a light shortbread cookie. They're like potato chips--can't eat just one!

  • 1 cup soft butter
  • 1 cup sifted powdered sugar
  • 1 tsp flavoring--vanilla, almond, rose etc.
  • 2.5 cups sifted white flour
  • 1/4 tsp salt


  • Cream butter, sugar and flavorings until well combined.
  • Sift the flour and salt together and add to the creamed mixture.
  • Mix the dough thoroughly, with your hands if necessary, until it is not crumbly.  (This is a dry dough so the hand mixing is sometimes necessary.)
  • Press and mold the dough into a long, smooth roll about 2 inches in diameter.
  • Wrap in wax paper and chill until stiff – at least 2 hours or overnight if the wax paper is sealed well to prevent drying out.
  • With a sharp knife, cut the log into thin slices (1 / 8 to 1 / 16 of an inch thick). Adjust baking time if you slice them thicker.
  • Place the slices on an ungreased baking sheet--this is a good cookie for parchment paper!--and bake at 400º F for 8 – 10 minutes.
  • Makes about 3 dozen two inch cookies. Easy recipe to double--but remember, they're like potato chips!
